Job Summary
Department-Specific Responsibilities
- Performs responsible and skilled work involved with the preparation and cooking of a wide variety of detailed food items for a dining hall (campus dining) and catering events.
- Responsible for the daily preparation items in the Chef's Corner, Salad Bar, Grab & Go Area, and cooked items for Catering Events.
- Ensures standard sanitation procedures, guest satisfaction, as well as cost and quality standards are maintained. Guest satisfaction revolves around the high quality of food along with its appearance and the overall dining experience.
- Supervises, coaches and oversees a staff of approximately 6 individuals. Encourages team building while holding them accountable for the work performance.
- Follow all culinary standards (The Den) set forth by the Director of Food Service along with Serve Safe guidelines. This includes sanitation, preparation, maintenance, cleanliness, daily waste log, temperature log, ordering product, and production sheets and all other applicable standards of service.
- Responsible for developing menus and creating new recipes in consultations with the Food Service Director.
- Monitors on-hand inventory and determines quantity of food to order. Communicates order information to General Manager. Works from recipes and instructions to prepare and cook food; calculates, weights and measures ingredient quantities; washes, peels, cuts, slices, trims or blends various items for cooking and serving. Assists Management in explaining and demonstrating methods and procedures for performing tasks to The Den's employees, including food handling and sanitation techniques. Provides input to management regarding the scheduling of employees.
- Maintains and supervises accurate counts on all food items prepared ensuring no discrepancies in amount of food needed verses amount of food prepared. Completes and utilizes daily production worksheets and waste log sheets and temperature logs, with 100% accuracy for each unit.
- Builds and maintains relationships with the students, staff and faculty, and uses these relationships with open communication to enhance their wants and desires for the department. Works with the director to incorporate community needs.
- Reviews inventory to assure that adequate supplies are available, requisitions food through vendors using online ordering systems and makes previsions when necessary.
- Ensures adherence to consistency recipes and product specifications.
- Coordinates food service responsibilities to have meals prepared at scheduled times. Sets-up and verifies that food items and station are ready to serve 30 minutes prior to schedule serving times. This includes the supervision of all Grab & Go Items for both Den and Brewfus along with daily Salad Bar and Soup station.
- Completes temperature log sheets, production sheets, and waste logs according to specified times with accuracy in the hot and cold holding stations to ensure food safety and accurate numbers to ensure low food waste.
- Responsible for maintaining and organizing all food storage areas: dry storage, Chef's Corner freezer and coolers, all Grab & Go coolers and freezer (all foods should be contained, labeled, and stored, designated areas in accordance with IUE and Serve Safe procedures).
- Supervises and maintains a clean sanitary work environment. Complies with federal, state, IUE and Serve Safe sanitation regulations and procedures. At beginning of shift, completes inspection of the entire kitchen area and coolers promptly act to correct deficiencies according to set forth procedures and regulations.
- Rinses, cleans and sanitizes dishes, pots, pans, and utensils. Stores in designated areas. Helps maintain all cooking and service items in orderly and sanitary conditions in accordance to IUE and Serve Safe procedures and regulations.
- At end of shift, cleans and sanitizes workstation area which include but not limited to walls, granite, inserts, cooler, freezer, prep table, range hood, holding tanks, stove top, cabinet fronts, cabinet interiors, sneeze guards, signage and small wares used in daily production.
- Orders of all food product for use in food service production. Orders supplies through vendors that have been approved via director of food services.
- Cooks food for all catering events and specialty orders as needed with 100% accuracy.
- Performs other duties and responsibilities related to those listed above which do not alter the basic level of responsibility of the position
- May be responsible for planning, hiring and scheduling of student employees, assigning and monitoring work, approving time off, providing regular training, taking corrective action, addressing employee and/or customer complaints and grievances and recruiting, reviewing and promoting employee development and growth.
- Explains and demonstrates methods and procedures for performing tasks to the dining facility employees, including food handling and sanitation techniques. Monitors work performance for quality, accuracy, and completeness to ensure compliance with departmental standards.
- Monitors and supports the food operation's process measures and is accountable for the results of these measures. Reviews production worksheet and organize tasks to shift staff. Places orders for food needed to meet worksheet production needs. Records usage of food and leftover quantities and stores food.
- Monitors, directs, and assists staff and student employees in preparation, proper serving sizes, proper food temperature, order taking, and delivery of food products in the proper media, and delivered in a timely manner. Ensures customer service standards are demonstrated on the job.
- Monitors on-hand inventory and determines quantity of food to order. Completes orders for inventory.
- Responds to and resolves customer' complaints and concerns to maintain positive relations with customers.
- Maintains food safety, training, and food logs. May have cash management responsibilities for retail food sales.
- May work from recipes and instructions to prepare and cook food; may calculate, weigh, and measure ingredient quantities; may wash, peel, cut, slice, trim, or blend various items for cooking and serving.
- May perform tasks specific to bartending, catering, or dining room services.
Qualifications
Combinations of related education and experience may be considered. Education beyond the minimum required may be substituted for work experience. Work experience beyond the minimum required may be substituted for education.

- High school diploma or equivalent (such as HSED or GED)

Working Conditions / Demands
This position requires tasks typically associated with back-of-the-house food service work. It involves periods of both sedentary work and times of frequent movement about the workspace. Using commercial kitchen equipment and tools, moving supplies and effective communication skills are necessary. The person in this role must be able to perform the essential functions with or without an accommodation.
